5 Running Things and Favorite Summer Salad
1- Two A Day's
End of July I only ran a few days. I was at girls camp for a week and the last week of UT I took it easy. I was ready to go last week, I started doing 2 workouts twice during the week. I need to up my miles to get ready for this Ragnar - Ultra.
Here is what my week looked like:
In addition - Monday I ran 4 miles on the trml in the evening, Wed and Thurs I worked out at Orange Theory. Friday was my rest day.
2- Recruiting
I went around the neighborhood for my 4 miles on Sat. Q came with me on her bike. It was great to visit together, even though she slowed me down! She didn't want to have to ride fast!
I will have to toughen her up and get her to go with me more. It's good to be together and cures my running boredom.
3- High Fitness
Have you heard of High Fitness? I hadn't, until I went to UT. Lenni and I went twice while I stayed with her. It was an easy way to get 2 workouts in while at her house! We had a great time! I love bouncing around/crazy dancing to music. It is right up my alley.
There was no way I was about to get up at 5 am to run with her! This was our workout bonding time. Love her.
4 - Hayley
I am so happy this girl moved to UT. That way we can see each other when I come to visit each year. Next year I want her to take me trail running in the mountains.
We ran twice together in one week. It was like we'd been running together weekly for the last 10 years! Running does that doesn't it? We are connected, and our love for running makes that connection a little more solid. All of the talking, and sweating, and feeling weak, and building each other, pushing each other. All of the vulnerability, the encouragement we experience together. It connects you. I am so happy I got to spend time with Hayley.
5- Nike Polka Dots
I got these cute shorts from Marshall's, these and the snake skin one's you see above. Fabulous right? The only downer about the pokie one's is they totally show your crotch sweat, which is hot right? Not so much. I have no shame and still wear them!
You know what else works? Wearing them on your bike ride, and riding through a rain storm! When all of the fabric is drenched it doesn't even matter!
Favorite Summer Salad - Cucumber, Tomato and Dill
We love this salad at our house. It is easy, healthy and delicious.
I will admit that I've been on a holding pattern making it though. Why? I have a certain annoyance with tomatoes that don't taste like tomatoes. I won't buy or eat them anymore. Is it just me? The only tomatoes that I buy, from the store, that taste like tomatoes, are little cherry size. No matter how they try to spin it (organic, vine ripened) they just don't taste like tomatoes.
Revolt!!! Holding pattern!
Last week out on my run, I passed our local farmers market. Well duh! Go get real tomatoes Carolyn! I did, and will continue to, until I can grow my own.
Re-enter favorite summer salad! We have had it twice in the last few days. We all love it (except the weird tomato haters in the family, who mostly eat the cucumbers and onions) and gobble it up.
I prefer all my veggies to be room temp, and I like to let my salad sit for 30 minutes before serving, just to let all that flavor get in there. It is really yum the next day, although I have to let it 'thaw' back to room temp before I eat it!
You know what else is good on it? Feta. Just yum!
I didn't have red onion when I made it the first time this week. It was just fine, although I do prefer the red onion.
Here is the recipe. Enjoy! Let me know if you like it.
